According to my breadmaker manual ("Breville Bread Master"), the steps go like this:
(I've omitted some irrelevant rows/columns from that table.)
I think something's slightly screwy, because if I add up the timings in the "Basic Med." column then I get 200 minutes (i.e. 3h20m). Also, the only difference between "Basic Light", "Basic Med.", and "Basic Dark" is the duration of the Bake step (65/70/75 minutes respectively), but adding/subtracting 5 minutes here apparently changes the total by 20 minutes.
It also seems slightly odd that the breadmaker does both kneads before the first rise; Delia recommends alternating (knead/rise/knead/rise), which seems more sensible.
Anyway, the point is that dough is almost identical to making a loaf, up until the end of "1st Rise"; it's then up to me to do a 2nd rise. That's not really a problem, because I have to get the dough out of the breadmaker tin anyway, and reshape it for the loaf tin, and pummelling it in between only adds an extra minute or so to the process.
